Vegan Chocolate Chip Cookies

Ingredients
Oil and Sugar Substitute
| 1/3 cup | raisins | | 1/3 cup | pitted dates | | 1/3 cup | water |
Egg Substitute
Flavoring
| 2 tsps | vanilla | | 1/3 cup | sugar | | 1 "dash" | salt | | 1/2 tsp | cinnamon | | 1 dash | nutmeg | | 3/4 cup | cocoa powder |
Base and Chunky Stuff
| 1 cup | whole wheat flour | | 0.75 cup | whole grain oats | | 1 cup | chocolate chips | | 1.5 tsps | baking soda |

Rating
These cookies are amazingly good, and healthy as well. They have
the dense texture of brownies, which combines well with the chocolate
flavor. The recipe is mildly complex, but not too bad.

Directions

Blend raisins, pitted dates and water until they are a paste. You
may need to chop the dates before putting them in the blender.

Mix the paste with the pumpkin, vanilla, sugar, salt, cinnamon,
nutmeg and cocoa powder.

Mix in flour, oats and chocolate chips.

Mix in baking soda using your hands in a kneading motion. Do this
for about a half minute to ensure that the baking soda is well
mixed.

Place blobs about the size of a tennis ball cut in half on a
greased cookie sheet and bake at 350 degrees for 30 minutes. You
should end up with six to eight cookies.
